Zearalenone is a nonsteroidal mycotoxin produced by Fusarium species that commonly contaminate cereal crops such as maize, wheat, and barley. It is classified as a fungal secondary metabolite with estrogenic properties that were recognized after its isolation from contaminated grain supplies. In the body, ZEN and its metabolites (including alpha- and beta-zearalenol) interact with estrogen receptors and are processed by phase I and phase II metabolism—oxidation/reduction and conjugation (for example, glucuronidation)—before urinary excretion. Analytical methods like LC-MS/MS detect ZEN and metabolites in urine to estimate recent exposure.

Elevated urinary ZEN generally indicates recent or repeated exposure to contaminated food or environments where Fusarium molds are present; it can also reflect slower metabolic clearance in some individuals.
