Alpha gliadin is one of several gliadin subtypes within the prolamin family of seed storage proteins produced by wheat (Triticum species). Biochemically it is rich in glutamine and proline, which makes some of its peptide fragments resistant to digestive enzymes and able to persist in the gut environment.
