κ-casein (kappa-casein) is one of the casein-family phosphoproteins found in mammalian milk, especially bovine milk used in many food products. Biochemically it is a glycosylated, phosphorylated protein that contributes to the structure and stability of casein micelles, allowing milk to remain a stable emulsion. Clinically and analytically, κ-casein is notable because enzymatic cleavage (for example during cheesemaking or digestion) releases the caseinomacropeptide and other fragments that can be biologically active and antigenic. These fragments are common targets in immune testing because they present distinct peptide sequences that the immune system can recognize as part of dairy exposure.

Interpreting Highs and Lows
