Omega Gliadin belongs to the gliadin family of prolamin storage proteins in wheat. Biochemically it is a glutamine- and proline-rich peptide fraction of gluten proteins; these properties make gliadins relatively resistant to enzymatic digestion and able to generate persistent peptides in the gut. Historically, gliadin subfractions like omega gliadin have been studied for their capacity to interact with human immune components. As a wheat storage protein, omega gliadin’s core biological role is nutrient storage in the seed, but fragments of the protein can be recognized by mucosal and systemic antibodies and therefore serve as markers of immune exposure to wheat-derived peptides.
