Biochemically, the biomarker represents food protein antigens and peptides from tuna muscle—examples include parvalbumins and other structural or contractile proteins—that can be sampled by the gut and presented to the immune system. Fish muscle proteins have long been studied in food immunology because they can elicit antibody responses and sometimes cross-react with proteins from other seafood. Functionally these proteins are responsible for muscle contraction, calcium handling, and fiber integrity in the animal; when consumed, peptide fragments may interact with mucosal and systemic immune pathways.
