Vitellogenin-1 is a large glycolipophosphoprotein produced by the livers of oviparous animals (for example, chickens). During egg formation it is cleaved into yolk storage proteins such as lipovitellin and phosvitin that supply fats, phosphates, and amino acids to the developing embryo. Biochemically it is classified among yolk precursor proteins and is a well-characterized dietary antigen in food testing. Vitellogenin genes are functional in birds and many fish but are not endogenously produced in humans; exposure occurs through ingestion of egg yolk and related products, making it a practical marker for egg-derived immune recognition.
