Hippuric acid is an organic acid (benzoyl‑glycine) formed biochemically by conjugation of benzoic acid with the amino acid glycine. Sources of benzoic acid include dietary compounds, microbial metabolism of polyphenols and aromatic amino acids, and certain environmental chemicals; the liver performs the conjugation step and the product is excreted in urine. Historically, urinary hippuric acid was used as a marker of occupational solvent exposure and dietary benzoates.
